Heat a skillet over med-high; working in batches, heat 4 cauliflower sandwich thins 1 min per side or until warm; add to plates

Spread each sandwich with 1-2 tbsp pesto

Heat 1 tbsp oil in skillet over med-low + pour in 1 cup eggs + salt/pep, then cook undisturbed until eggs around edges begin to set, about 1 min; continue cooking, using a spoon to stir eggs until curds form + no liquid remains, 1-2 min; divide eggs between sandwiches

Top each sandwich with a handful of spinach + enjoy!
