Cook time: 30 minutes
Preheat oven to 425°; peel, then cut sweet potato into ½-inch thick, 3-inch long sticks, add to a sheet pan, drizzle with 1 tbsp oil + salt/pep + toss to combine; bake 15 min, turn fries over + bake until browned + tender, about 10-15 min
Heat 1 tbsp oil in skillet over med-high; sauté broccoli 4-5 minutes; add ¼ cup water, reduce heat, cover + steam 3-5 min until tender
Heat lightly oiled skillet over med-high; pat pork dry, rub each chop with 1-2 tbsp pesto, then sear 2-3 min per side until warm
