Cook time: 25 minutes
Preheat oven to 425°F; mix potatoes with 1 tbsp oil + salt/pep, then add to sheet pan; roast 20-25 min until tender
Meanwhile, heat 1 tbsp oil in skillet over med-high; add broccoli + sauté 4-5 minutes until lightly browned; add ¼ cup water, reduce heat, cover + steam 3-5 min more until tender; set aside
Heat lightly oiled skillet over med-high; pat chicken dry, sear 2 min per side until warm, rub each with 1-2 tbsp pesto
Divide all to plates
