Instructions
Cook time: 15 minutes
Preheat oven to 400° + place 2 pita on a sheet pan
Slice leftover cooled potatoes into thin rounds or microwave potato in it's wrapper on high 5-6 min flipping over halfway through cook time; allow to cool completely, remove skin + slice
Wash pepper, cut off stem + discard seeds, then thinly slice
Spread each pita with ¼ cup pesto then layer with potato slices + peppers; sprinkle each pizza with ¼ cup cheese; bake 7-9 min until hot + melty
