Cook time: 13 minutes
Heat 1 tbsp oil in a skillet over medium; crumble half the grounds into the pan + sauté 5-7 min until lightly browned + hot
Wash pepper, cut off stem + discard seeds, then cut into bite-size pieces; heat 1 tsp oil in skillet over med-high, add peppers to pan, season with salt/pep + sauté 4-5 min or until tender
Meanwhile, stack 4 tortillas on a plate + wrap with a damp paper towel; microwave 15-30 sec or until warm + soft
Divide fillings to tortillas + dollop each with 1 tbsp guacamole—tasty!
