Instructions
Cook time: 17 minutes
Heat 1 tbsp oil in skillet over med-high + cook veggie mix with salt/pep 3-5 min until tender; divide to plates
Pat chops dry + season with salt/pep; heat 2 tsp oil in skillet over medium, add chops + cook 3-4 min per side until cooked through, no pinkness remains + internal temperature is 145°; remove from pan
In the same pan, add 1-2 tbsp oil (or butter!), the juice of 1 lemon + 2 tbsp of drained/rinsed capers; stir over low heat, scraping up any brown bits to create a sauce (about 2-3 min); divide pork to plates + top with pan sauce + chopped parsley
