Preheat oven to 425°; heat 1 tsp oil in skillet over med-high; pat pork dry, season with salt/pep + sear 2-3 min per side; place pork on sheet pan; roast 25-30 min til internal temp is 145°; rest pork on cutting board 5 min

Meanwhile, microwave 2 potatoes in their wrappers, 6-8 min, flipping over halfway through cook time; carefully cut in half, then set aside

Chop broccoli in 1-inch pieces + heat 1 tbsp oil in skillet over med-high; cook broccoli with salt/pep 2-3 min, then add ½ cup water, cover + steam 3 min; set aside

Slice pork into 1-inch pieces + divide ½ of pork onto plates with veggies + potato (save leftover pork for lunch tomorrow)
