Instructions
Cook time: 30 minutes
Preheat oven to 400° + place rack in the center
Chop onion; wash, remove seeds + stem from red pepper then coarsely chop; heat 1 tbsp oil in skillet over med; cook onion, pepper + salt/pep 5-7 min until softened; add beef to veggies + cook 4-6 min until browned + cooked through; stir in rice packets + container of marinara; season with salt/pep
Slice poblanos in half lengthwise + discard seeds; stuff peppers with filling then sprinkle each half poblano with ¼ cup cheese; add to sheet pan + cover with foil; roast in oven 15-20 min then remove foil + roast 15 min more until hot + bubbling
