Cook time: 16 minutes
Heat 1 tbsp oil in skillet over med-high + cook veggie mix with salt/pep 3-5 min until tender; set aside
Heat 1 tbsp oil in skillet over med-high; pat chicken dry, season with salt/pep; cook 4-6 min per side until fully cooked, no pinkness remains + internal temp is 165°; slice chicken into bite-size pieces
Add ½ cup hummus to each bowl + spread, flattening slightly, into a circle in the center of the bowl; toss rainbow veggies with chicken + 1 cup halved tomatoes, then add to bowls on top of hummus (drizzle with a little olive oil if desired); dig in!
