Cook time: 13 minutes
Preheat oven to 400°; pat fish dry, line a sheet pan with foil, drizzle fish with oil, salt/pep + half the seasoning packet; bake 10-12 min until firm, opaque + cooked through
Meanwhile, drizzle 2-4 tbsp coconut curry into each bowl + spread, flattening slightly, onto the side of the bowls
Heat 1 tbsp oil in skillet over med-high + cook veggie mix with salt/pep 3-5 min until tender; divide to bowls
Wash + slice 1 zucchini into ¼-inch rounds; heat 1 tsp oil in skillet over med-high, add to pan, season with salt/pep + sauté 3-4 min until tender; divide to bowls + top with salmon
