Ingredients
Instructions

Cook time: 15 minutes

Preheat oven to 400°; pat fish dry + lay on a sheet pan lined with parchment or foil; drizzle on oil, season with 2 tsp of seasoning + salt/pep; roast 9-12 min until cooked through + flakes easily with a fork

Meanwhile, microwave 2 potatoes in their wrappers on high, 6-8 min, flipping halfway through (caution, that's a hot potato!); carefully cut in half

Heat 1 tbsp oil in large skillet over med-high + sauté half the spinach with salt/pep 1-2 min until wilted; add remaining spinach + cook 1-2 min more until all spinach is wilted

Divide everything between plates—looks great!
