Cook time: 24 minutes

Preheat oven to 400°; mix half of potatoes with 1 tbsp oil, salt/pep + fave spices (we like garlic powder), then spread on a sheet pan; roast 20-25 min until tender

When 12 min remain on potatoes, pat fish dry, top fillets with 4 tbsp dressing, 2 tbsp drained/rinsed capers + salt/pep; push potatoes to one side of sheet pan, set salmon on empty side + bake 10-12 min until firm, opaque + cooked through

Heat 1 tbsp oil in large skillet over med-high + sauté half the spinach + salt/pep 1-2 min until wilted; add remaining spinach + cook 1-2 min more until all spinach is wilted

Divide all to plates + enjoy!
