Cook time: 30 minutes

Preheat oven to 400°; slice half the potatoes in half lengthwise, mix with 1 tbsp oil, salt/pep + fave spices (we like garlic powder), then spread on a sheet pan cut side down; roast 15 min, remove from oven + push potatoes to one half of pan

Pat fish dry, add to empty part of pan + cover each fillet with 1 tbsp dressing + salt/pep; roast 10-15 min until fish is firm, opaque + cooked through + potatoes are tender

In a large bowl, toss spinach with 2-4 tbsp dressing, then divide between plates

Top salads with potatoes + trout—looks good!
