Instructions
Cook time: 20 minutes
Microwave 2 potatoes in their wrappers on high 6-8 min, flipping over halfway through cook time (caution, that's a hot potato!); carefully cut in half
Meanwhile, pat fish dry + season with salt/pep + 2 tsp herb seasoning; heat 1 tbsp oil in skillet over med-high (get that pan hot, otherwise the fish will stick) + sear 3 min, flip + sear another 1-2 min (for well done cook 3 min on second side)
Slice asparagus into ½-inch pieces, discard any tough pieces; heat 1 tbsp oil in skillet over med-high, add asparagus, salt/pep + sauté 4-6 min until tender + bright green
Divide all between plates + drizzle green goddess onto each potato—looks great!
