Preheat oven to 400°; slice half of potatoes in ½ lengthwise, mix with 1 tbsp oil, salt/pep + fave spices; spread on sheet pan cut-side down; bake 15 min

Meanwhile, toss ½ of broccoli with 1 tbsp oil + salt/pep; after potatoes have baked 15 min, remove sheet pan, push potatoes to one side + add broccoli to empty side; roast veggies 10-12 min til tender + browned

Pat pork chops dry; toss pork with salt/pep, ¼ cup sauce + 1 tbsp oil; add to a second sheet pan + roast 15-17 min until cooked through, no pinkness remains + internal temperature is 145°

Divide all to plates; garnish with chopped scallions + serve each with 2 tbsp sauce
