Instructions
Cook time: 15 minutes
Ensure avocado is ripe (soft to the touch); if avocado is too firm, ripen faster by placing in a paper bag, 1-2 days
Heat 1 tsp oil in skillet over med-high; crumble half the pumfu, add to skillet + sauté 2-3 min until hot
Turn heat to low; pour in container of sauce (be careful of splatters!) + simmer uncovered 5 min until hot; season with salt/pep + your fave spices
Use a spoon to make 4 small wells in the sauce; carefully pour ¼ cup of eggs into each well, cover + cook until eggs set, 4-6 min; divide between plates + serve with sliced avocado on top
