Instructions
Cook time: 11 minutes
Heat a skillet over med-high; in batches, warm 4 sandwich thins 1 min per side; spread 1 tbsp avocado spread onto each sandwich
Heat 1 tbsp oil in skillet over med-high + cook 1/2 of veggie mix with salt/pep 3-5 min until tender; set aside
Heat 1 tbsp oil in skillet over med-low, pour in 1 cup eggs + salt/pep; cook undisturbed until eggs around edges begin to set, about 1 min; cook 1-2 min more, stirring eggs until curds form + no liquid remains
Top each sandwich with veggie mix, eggs + avocado —enjoy!
