Cook time: 10 minutes

Heat 1 tsp oil in skillet over med/high; pat steaks dry, season with salt/pep + sear undisturbed 2-3 min, flip + cook 2-3 min more for med-rare (for well done add 1-2 min per side); rest steaks 5 min; cut into ½-inch slices

Meanwhile, cut onion in ½ + peel; finely dice ½ onion + put in small bowl; wash + dry parsley; remove stems, roughly chop + add to bowl; slice lime + juice into bowl; add 1-2 tbsp oil + salt/pep

Meanwhile, tear corner of rice to vent + heat in microwave 90 sec (careful—it'll be hot!)

Divide rice + steaks between plates + top steaks with fresh "salsa verde"—yum!
