Cook time: 12 minutes

Boil a large pot of salted water, add ½ of the orzo + cook 9-11 min or until al dente, then drain + return to pot; stir in 2 cups spinach, ¼ cup tzatziki + salt/pep (spinach will wilt)

Pat fish dry + season with salt/pep + ½ packet of seasoning; heat 1 tbsp oil in skillet over med-high (get that pan hot, otherwise the fish will stick) + sear fish 3 min, flip + sear another 1-2 min (for well done cook 3 min on second side)

Divide salmon + orzo salad between plates—well done, chef!
