Instructions
Cook time: 7 minutes
Cut onion in half from root to stem, peel + thinly slice ½ (or whole) of onion; set aside in small bowl
Wash + dry cilantro, remove stems + roughly chop leaves; add cilantro, squeeze ½ of lime + salt/pep into onion bowl, then mix to combine
Heat lightly oiled skillet over med-high, pat beef dry, add to pan in one layer + sear 2 min (for well done add 1 min); flip + cook 1 more min, season with salt/pep + sprinkle on 2-3 tsp seasoning; set aside
In batches, heat 4 tortillas in skillet over med-high, 30 sec or until warm; add beef + onion salad to tortillas
