Instructions
Cook time: 18 minutes
Heat 1 tbsp oil in skillet over med-high; pat scallops dry, add to pan + season with salt/pep; sear undisturbed 2 min, then flip over + sear 2-3 min more until firm, opaque + cooked through; set aside
Heat 1 tbsp oil in skillet over med-high; add broccoli, salt/pep + sauté 4-5 min until lightly browned; add ¼ cup water, reduce heat, cover + steam 3-5 min more until tender; set aside
Heat skillet over med-high + warm rice with 1 tbsp water for 2 min, stirring occasionally
Return everything to pan + mix in 2-4 tbsp sauce; divide between plates + enjoy!
