Cook time: 18 minutes

Preheat oven to 450°; slice potatoes in half, mix with 1 tbsp oil, salt/pep + fave spices (we like garlic powder), then spread on a sheet pan cut side down; roast 15-18 min until tender

Heat 1 tbsp oil in a skillet over high; pat meat dry, season with salt/pep + sear undisturbed 2 min; flip + cook, turning often, 1-2 min until browned (meat keeps cooking after being removed, be sure not to overcook for best results)

Heat 1 tbsp oil in large skillet over med-high + sauté half the spinach + salt/pep 1-2 min until wilted; add remaining spinach + cook 1-2 min more until all spinach is wilted

Divide ingredients between plates; then drizzle with sauce
