Cook time: 5 minutes
Ensure avocado is ripe (soft to the touch); if avocado is too firm, ripen faster by placing in a paper bag, 1-2 days; slice avocado
Heat 1 tbsp oil in skillet over med-high; pat shrimp dry + sauté with salt/pep 1-2 min until shrimp warmed through
Wash pepper, cut off stem + discard seeds, then cut into bite-size pieces; wash + dry ½ cucumber; dice into bite-size pieces
Divide salad mix to bowls then divide veggies to bowls; top bowl with shrimp, avocado + ¼ cup each of dressing
