Preheat oven to 400°; pat chicken thighs dry, trim excess fat if desired; add chicken + tomatoes to sheet pan + season with salt/pep + seasoning packet; drizzle with 2 tbsp oil + roast 20-25 min until tomatoes burst + chicken is fully cooked, no pinkness remains + internal temp is 165°
Divide chicken + tomatoes between plates, then sprinkle on 1-2 tbsp cheese to each꠳nice job!
