Instructions
Cook time: 28 minutes
Preheat oven to 400°; pat chicken thighs dry + trim excess fat; toss chicken with salt/pep, ¼ cup tzatziki + 1 tbsp oil; add to sheet pan + roast 20-25 min til fully cooked + internal temp is 165°
Slice half of potatoes in ½ lengthwise, mix with 1 tbsp oil, salt/pep + fave spices; spread on second sheet pan cut-side down; bake 15 min
Meanwhile, toss ½ of broccoli with 1 tbsp oil + salt/pep; after potatoes have baked 15 min, remove sheet pan, push potatoes to one side + add broccoli to empty side; roast veggies 10-12 min til tender + browned
Divide all to plates; garnish with chopped parsley + serve each with 2 tbsp tzatziki
