Preheat oven to 425°
Cut onion, zucchini + pepper into 1-inch pieces, discarding stems + seeds; add veggies to a bowl with tomatoes + olives; whisk seasoning packet with salt/pep, 3 tbsp oil + juice from lemon; toss half of mixture with veggies; spread veggies onto a half sheet pan
Trim chicken thighs + season with salt/pep; cut feta into 1-inch chunks; nestle chicken + feta between veggies then drizzle with remaining sauce; bake 25-30 min until chicken is cooked through + veggies are tender (for crispy chicken broil high 3-5 min)
Divide Greek chicken to plates then garnish with freshly chopped parsley—CUL8R take-out!
