Cook time: 10 minutes
Break up ½ the pork into bite-size pieces, discarding banana leaf (save remaining for lunch tomorrow); heat a skillet over med-high + sear pieces 3-4 min, turning half way through until meat is crisped + hot; set aside
Slice kernels off cob from 2 ears of corn; heat 1 tbsp oil in skillet over med-high + sauté corn with salt/pep 2-4 min until tender; set aside
In batches, heat 4 tortillas in skillet over med-high 30 sec or until warm; slice half an onion
Divide pork, corn + onions among tortillas then dollop on avocado spread
