Instructions
Cook time: 13 minutes
Boil a large pot of salted water, add pasta + cook 4-6 min or until al dente, then drain + return to pot
Meanwhile, heat 1 tbsp oil in large skillet over med-high + sauté half the spinach + salt/pep 1-2 min until wilted; add remaining spinach + cook 1-2 min more until all spinach is wilted; set aside
Heat 1 tbsp oil in skillet over med-high; pat shrimp dry + sauté with salt/pep 2-3 min until shrimp is pink, opaque + cooked through; add spinach + sauce to shrimp + warm 2 min
Toss pasta with sauce + divide to plates
