Cook time: 13 minutes
Ensure avocado is ripe (soft to the touch); if avocado is too firm, ripen faster by placing in a paper bag, 1-2 days
Microwave potatoes in bag for 6-7 min; let cool 1-2 min + chop into bite-size pieces
Meanwhile, heat 1 tbsp oil in a skillet over medium; add chorizo + sauté 5-7 min until browned; set aside
Heat 1 tsp oil in skillet over med-high; wash one pepper, cut off stem + remove seeds, then cut into bite-size pieces + sauté 4-5 min or until tender
Add chorizo + potatoes to skillet to combine; divide between plates + top with avocado slices—yum!
