Heat 1 tbsp oil in a skillet over medium; sauté chorizo 5-7 min until browned + hot
Cut half of potatoes into equal size pieces (save other half for later); add potatoes cut-side down to a skillet; add 1 tbsp oil + ¼ cup water then cover; heat over med-high 5 min then remove lid; heat 3-4 min until water evaporates + potatoes are browned + crispy
In batches, heat 4 tortillas in skillet over med-high 30 sec or until warm; divide everything between tortillas with a dollop of pesto aioli on each taco—delish!
