Instructions
Cook time: 27 minutes
Preheat oven to 400°, arrange racks on top + bottom thirds of oven; mix potatoes with 1 tbsp oil + salt/pep; place on a sheet pan, add to lower rack + roast 20-25 min until tender
Pat fish dry, line a sheet pan with foil, top each fillet with 1-2 tbsp sauce + salt/ pep; bake on upper rack 10-14 min until firm + opaque
Meanwhile, heat 1 tbsp oil in skillet over med-high + cook brussels with salt/pep 5-6 min until tender, stirring minimally to ensure browning
