Heat 1 tsp oil in skillet over med/high; pat both steaks dry, season with salt/pep + sear undisturbed 2-3 min, flip + cook an additional 2-3 min for med-rare (for more well done add 1-2 min per side); rest steaks 5 min on cutting board; cut steaks against grain into ½-inch slices
Meanwhile, add arugula to a large bowl, drizzle with fresh lemon juice, 1 tbsp oil + 2-4 tbsp cheese; toss to combine
