Instructions
Cook time: 17 minutes
Roughly chop pepper mix; heat 1 tbsp oil in skillet over med-high + sauté pepper mix with salt/pep 4-5 min or until soft + starting to brown; remove from pan + set aside
Heat 1 tbsp oil in skillet over high; add half the meat to pan, break into large chunks + sear undisturbed 3-4 min; flip meat over, then break into small pieces; cook 1-3 min until fully cooked + no pink remains; season generously with salt/pep + fave spices (we like taco seasoning)
Add veggies + beans with ¼ cup water to pan; simmer 2-4 minutes until hot, then divide between bowls
