Instructions
Cook time: 8 minutes
Wash lettuce, 3 cucumbers + 1 pepper; cut off stem + discard seeds of pepper then slice into thin strips
Thinly slice cucumbers, lettuce + half the bag of carrots
Fill any shallow bowl with warm water + dip one spring roll wrapper into water until soft but not mushy, no more than 30 sec; move to a work surface + add a small handful of veggies (laying lengthwise) onto bottom third of wrapper; fold up bottom edge to cover fillings, then fold in each side + roll up, burrito-style; repeat with 3 wrappers
Serve veggie rolls with a drizzle of chili lime
