Instructions
Cook time: 11 minutes
Heat 1 tbsp oil in skillet over med-high, slice tofu in half + heat until browned (1-2 min); set aside
Heat 1 tbsp oil in skillet over med-high; sauté veggies + salt/pep for 2 min, then add 2 tbsp water, cover + cook 2-3 min until tender; set aside
Heat skillet over med-high + warm rice with 1 tbsp water 2 min, stirring minimally
Turn off heat + combine it all with 2-4 tbsp sauce
