Ensure avocado is ripe; if avocado is firm, ripen by placing in a paper bag, 1-2 days; slice avocado
Preheat oven to 425°; chop cauliflower into 1-inch pieces, spread on a sheet pan, drizzle on 2 tbsp oil, ½ seasoning packet + salt/pep; roast 10 min
Pat mahi mahi dry with paper towels + cut into bite-size pieces; season generously with salt/pep, 1 tbsp oil + remaining seasoning; flip cauliflower + push to one side of hot pan; add fish to pan + bake veggies + fish 10 min more til fish is cooked through + veggies are tender
Meanwhile, warm beans in skillet 1-2 min; divide veggies, fish + beans to bowls then top with avocado
