Preheat oven to 450°; slice potatoes into 1-inch pieces, mix with 1 tbsp oil, salt/pep/fave spices (we like garlic powder); roast 15-18 min until tender

Meanwhile, wash zucchini, then slice on the diagonal into ¼-inch pieces; heat 1 tbsp oil in skillet over med-high, add to pan, season with salt/pep + sauté 3-4 min until tender

Heat 1 tbsp oil in a skillet over med-high; sear paneer 1-2 min per side until browned; take pan off heat, carefully add sauce (it will spatter) + toss paneer in sauce to coat; divide all between plates—delish!
