Cook time: 15 minutes

Remove bay leaf from pork; using half the pork, chop into 2-inch chunks; heat skillet over med-high, add pork + sauté 4-5 min until soft; break up pork using forks + sear in one layer 2-3 min more until crisp; set aside

Meanwhile, wash pepper, cut off stem + discard seeds, then cut into bite-size pieces

Heat a skillet with 1 tbsp oil over med; sauté peppers 2-3 min til starting to brown, add rice + cook 3-4 min, stirring often until hot; add pork to rice

Divide between plates + dollop avocado over each—yum!
