Heat skillet over med-high + add rice with 1 tbsp water; stir occasionally for 2 min until warm; divide between 2 bowls

Heat 1 tbsp oil in large skillet over med-high + sauté half the spinach + salt/pep 1-2 min until wilted; add remaining spinach + cook 1-2 min more until all spinach is wilted; set aside

Drain broth from chicken packet; heat 1 tbsp oil in skillet over med; add chicken to pan, break into small pieces + sauté 2-3 min until browned on all sides; turn heat to low + add sauce packet; cook 1 min until sauce is hot; divide chicken + veggies between bowls
