Cook time: 14 minutes
Heat 1 tbsp oil in skillet over med-high + cook veggie mix with salt/pep 3-5 min until tender; set aside
Heat lightly oiled skillet over medium + season with salt/pep; cook burgers 5 min on one side, then flip over, top burgers with 1 slice of cheese, cover + cook 2-3 min more until cooked through + cheese has melted
Meanwhile, toast 2 buns until warm + golden
Add burgers to buns, top with veggie mix + any tasty extras—looks good!
