Heat 1 tbsp oil in skillet over med-high; sauté veggies for 2 min, then add 2 tbsp water, cover + cook 2-3 more min until tender; set aside

Heat skillet over med-high + add rice blend with 1 tbsp water; stir minimally for 2 min until warm

Turn off heat + combine all with 2-4 tbsp curry
