Instructions
Cook time: 30 minutes
Preheat oven to 400°F; slice ½ package of potatoes in ½ lengthwise, mix with 1 tbsp oil, salt/pep + fave spices (we like garlic powder), then spread on a sheet pan cut side down; roast 25-30 min until tender
Meanwhile pat tuna steaks dry, season generously with salt/pep + fav spices; heat skillet over med/high with 1 tbsp oil, sear steaks 2 min per side for med-rare* (if width of steak is less than 1-inch reduce by 1 min on one side)
Add arugula to a large bowl, drizzle on 2-4 tbsp dressing + toss to combine
Add all to plates—looks good!
*The USDA recommends a minimum safe cooking temperature of 145°F for tuna
