Cook time: 25 minutes
Preheat oven to 400°, place meatloaf + sauce in a baking dish; bake 20-25 min until warmed through, then slice into 2 pieces
Meanwhile, microwave 2 potatoes in their wrappers on high 6-8 min, flipping over halfway through cook time (caution, that's a hot potato!); carefully cut potatoes crosswise into ¼-inch slices, without cutting through the bottoms, so potatoes remain intact
Lightly oil a small baking dish, place potatoes in dish + drizzle with each 1 tbsp oil, salt/pep + fav spices (we love garlic powder); bake 10-15 min until crispy
Wash + dry parsley, remove stems + roughly chop; sprinkle the hasselback potatoes with parsley
