Cook time: 27 minutes
Preheat oven to 450°; drain beans, then rinse + pat dry; toss with 1-2 tbsp oil, salt/pep + your fav seasoning; scatter beans on sheet pan + roast 25-30 min, flipping 2-3 times throughout cooking, until beans are crisp on the outside but soft in the middle
Meanwhile, heat 1 tbsp oil in a skillet over high; pat meat dry, season with salt/pep + sear undisturbed 2 min; flip + cook, turning often, 1-2 min until browned (meat keeps cooking after being removed, be sure not to overcook for best results)
Dollop 2-4 tbsp tzatziki + spread, flattening slightly, onto the middle of the bowl
Thinly slice 3 cucumbers; divide veggies, beans + bison to bowls
