Instructions
Cook time: 12 minutes
In a small pot, boil ¾ cup plus 1 tbsp of water; add a pinch of salt, 2 tsp of oil + stir in ½ of couscous; turn off heat, cover + let stand 5 min; fluff with a fork
Heat a skillet over med heat, pour chicken + juice into pan, break up chicken with a wooden spoon, heat 2 min, flip + cook 2-3 min more until warmed + browned; break up chicken into bite-size pieces if desired
Meanwhile, chop all veggies into bite size pieces
Divide couscous, chicken + veggies between bowls; dollop 2-3 tbsp sauce onto each—enjoy!
