Preheat oven to 425° + place a sheet pan in oven; heat 2 tbsp oil in skillet over med-high; pat pork dry + sear undisturbed 2-3 min on each side; carefully remove sheet pan from oven + place pork on sheet pan; roast pork 25-30 min until cooked through, no pink remains + internal temp is 145°F; rest pork on cutting board 5 min; slice against grain into 1-inch pieces

Meanwhile, wash 2 peppers, cut off stems + discard seeds, then cut into strips; spread broccoli and peppers onto a separate sheet pan, drizzle on 1 tbsp oil + salt/pep + bake 10-12 min or until tender

Divide everything between plates with 2 tbsp tzatziki—nice work!
