Cook time: 13 minutes
Microwave sweet potato in wrapper on high 6-8 min (caution, that's a hot potato!); carefully cut in half, then add to plates
Heat 1 tbsp oil in a skillet over medium; sauté chorizo 5-7 min until browned + hot; set aside
Heat 1 tbsp oil in skillet over med-high + cook Superblend with salt/pep 5 min until tender, stirring minimally to ensure browning
Top potatoes with chorizo + veggies then dollop on 1-2 tbsp sour cream per potato—nice job!
