Instructions
Cook time: 10 minutes
Heat skillet over med-high + add rice mix with 1 tbsp water; stir occasionally for 2 min until warm + add to bowls
Heat 1 tbsp oil in skillet over med-high, slice tofu nuggets in half, heat until warm + browned for 1-2 min; add to bowls
Heat 1 tbsp oil in large skillet over med-high + sauté half the spinach + salt/pep 1-2 min until wilted; add remaining spinach + cook another 1-2 min until all spinach is wilted, then stir in 2-4 tbsp coconut curry until warmed through; add to bowls
