Instructions
Cook time: 5 minutes
Cut paneer into 1 in cubes; heat 1 tbsp oil in skillet over med + sauté paneer 2-3 min until golden; set aside
Cut all beets into quarters
Add arugula to a large bowl, drizzle on 2-4 tbsp dressing + toss to combine; mix in beets and paneer, then divide all between plates
