Cook time: 33 minutes
Preheat oven to 400°; wash, then cut 2 peppers in half lengthwise + discard seeds; lay cut-side up in lightly oiled baking dish, season with salt/pep + bake 15-20 min until tender
Meanwhile, break chicken into bite-size pieces; add chicken to a bowl, mix with rice + ½ cup sauce
Divide chicken mixture among peppers; grate 3 cheese rounds using a box grater + divide to tops of peppers; bake 10-15 min more or until hot + melty
